Simple and Healthy Summer Snacks
I am all about that super simple easy life during the summer. I need grab and go items for my busy schedule. Also, as all of us teachers already know, I need my snacks to be affordable. Not getting paid during the summer can really affect my summer budget.
One quick and easy snack/meal I constantly find myself making is a mozzarella, basil, cucumber, and avocado salad. I loath tomatoes, but if you’re a fan - throw those bad boys in there as well. I get all my ingredients from my local Trader Joe’s. You can not go wrong with Trader Joe's Marinated Fresh Mozzarella. Once I chop up my ingredients and throw them into a bowl, I add a dash of the Everything but the Bagel Seasoning or, if I’m feeling really adventurous, TJ’s Green Goddess Seasoning Blend. Last, I drizzle some balsamic vinegar on top and crush that tasty salad.
Another super easy snack I always have on hand in my house is fresh summer fruit, washed and cut and stored in the fridge. With an active 6-year-old and a “trying to get healthy” husband, we go through a lot of fruit. It is easy to turn to the quick packet of chips or cookies when you’e wanting a quick bite. However, if the fruit is front and center, that will always go first. Some fruit we have been eating a ton of lately are peaches, nectarines, blueberries, and strawberries. I love to store my fruit in this handy-dandy tray. It is also awesome for camping, outdoor social gatherings, or long days at the pool because it has an ice storage component to keep your fruit or food cold.
You can never go wrong with cut up veggies and dip. Along with my cut fruit, I also keep cut up cucumber, carrot, and celery on hand. I store them in water, like my mom used to do, to keep them fresh and crisp. When we are on the go, I grab a handful of veggies, some cut up fruit, and some string cheese, and I am ready to rock. Sometimes I buy the individual hummus containers from Trader Joe’s or Costco, but usually I just get one tub of hummus and will scoop some into a reusable dip container.
Does your family like pickles? We are pickle people over in my household. For a quick snack sometimes we will just grab some pickles, salami, and that same old mozzarella cheese I mentioned above and have a quick little nibble. It is a fast, healthy, and always satisfying snack that is easy to prepare in a pinch.
Last, you can never go wrong with some hard-boiled eggs. We love to bust out our Insta Pot and make a large batch of hard boiled eggs to get us through the week. We use the simple 5-5-5 method and our eggs peel like a dream, each and every time. I always toss some of that Everything but the Bagel Seasoning on my eggs or the Green Goddess Seasoning for an added kick.
